La Paz is experiencing a culinary boom with the arrival of renowned national chefs opening new spaces in the city. Restaurants such as "Sabor del Mar" by chef Rodrigo Méndez and "Tierra Viva" by chef Sofía Ramos have begun to establish themselves on the local culinary scene, attracting both tourists and residents.


According to data from the National Chamber of the Restaurant Industry, the city has seen a 25% increase in restaurant openings in the last year, generating nearly 400 new direct jobs.


The chefs focus on a fusion of local products—such as chocolate clams, oysters, fresh fish, and damiana—with contemporary techniques, emphasizing sustainability and responsible consumption.


This expansion boosts the economy and establishes La Paz as an emerging culinary destination in the country. However, some critics warn of the risk of gentrification and the impact on small local businesses.


Chef Rodrigo Méndez told BajaSur360 : "We want to be part of the community, not displace it. That's why we work with local fishermen and regional producers . "


Tourism authorities plan to launch a culinary promotion campaign to position La Paz as the culinary epicenter of northwestern Mexico.
