May 17–18: 18 Chefs from Mexico and Guatemala Gather at María Corona Los Cabos for a Limited Gourmet Mole Experience

From May 17 to 18, Los Cabos will host the third edition of the International Mole Route at the María Corona Los Cabos restaurant, cementing its status as a key hub for promoting Mexican gastronomy on the world stage. Following stops in Loreto and Guatemala, this edition brings together 18 chefs from nine Mexican states and Guatemala, each presenting gourmet takes on the traditional mole to an exclusive audience of 100 diners per day.
Backed by the National Chamber of the Restaurant and Seasoned Food Industry (CANIRAC) and the Municipal Tourism Office, the festival both reinforces cultural identity and diversifies Cabo San Lucas’s tourist offerings.

The Mole Festival will run May 17–18 at María Corona Los Cabos, located in downtown Cabo San Lucas.
Participants & Culinary Offerings
Under the auspices of CANIRAC Los Cabos, led by Óscar Morando Villa, 18 chefs representing nine Mexican states and Guatemala will serve inventive, gourmet versions of mole, enriching the culinary experience for both locals and visitors.

Municipal Tourism Director Ana Gabriela Navarro González emphasized how events like this broaden Los Cabos’s tourism appeal. Óscar Morando Villa noted the festival as an act of identity, pride, and connection to Mexico’s culinary roots. Limited to 100 guests per day, the experience includes gourmet mole tastings; advance ticket purchase is recommended to secure entry.
Mole: A Culinary Heritage
Mole—derived from the Nahuatl word mōlli—is a pre-Hispanic Mexican sauce made from chiles, spices, and sometimes chocolate, symbolizing the fusion of cultures and flavors in Mexico. Its most iconic varieties include mole poblano, mole negro, and mole verde, each defined by regionally distinctive ingredients that showcase the country’s rich culinary diversity.
